Chef Darren Hawley of Cedar is the new executive chef at Crystal Mountain in Thompsonville.
Hawley, a graduate of the Culinary Institute of America, will have his talents showcased in the Vintner Food & Wine Celebration, set for Nov. 8-11 at Crystal Mountain. The weekend is devoted to fine wines and exquisite cuisine with a tour of Leelanau Peninsula vineyards and gourmet reception on Friday, Nov. 8. The following day featured a signature five-course dinner and expanded menu with five-course dinner, prepared by Hawley.
His acceptance of a position at Crystal will not change operations of his restaurant, Stubbs, in Northport.
Sunday activities at the event will include nine classes featuring food and drink pleasing to the palate:
• Beer — New Holland Brewery’s Ambassador of Great Beer, Isaac Hartman, will discuss the art of matching food with the perfect brew;
• Wines — Guest vintner Joseph Carr, an award-winning sommelier and wine industry executive from the Napa Valley, will feature his own Cabernet Sauvignon, Chardonnay and Sauvignon Blanc;
• Chocolate — Mimi Wheeler of Grocer’s Daughter in Glen Arbor will lead guests through the world of chocolates and the special care taken to create each.
This is not the first time Hawley’s epicurean talents have married food and wine. His catered picnic luncheons at L. Mawby Vineyard were sold out in July and August.
