The kitchen staff at Art’s Tavern in Glen Arbor sent us this week’s recipe for Watermelon Gazpacho. Hold onto this recipe, as the local farmers will begin harvesting watermelon very soon.

Watermelon Gazpacho
Ingredients:
1 med.-lg. seedless watermelon, diced including the
light green portion of rind
5 lg. cucumbers, diced
1 ½ cups green onion, diced
2 T. ginger, ground
¼ cup basil
¼ cup parsley
1 cup red raspberry vinegar
¼ cup olive oil
1 T. salt
½ cup brown sugar, packed
2 sm. cans (20 oz. each) pineapple chunks, including
juice
1-2 T. seasoning salt
Directions:
Mix all ingredients in a bucket. Remove ¾ of the mixture and chop it more finely with a shredder blade. Add it
back into the diced fruit mixture. Refrigerate overnight
and serve cold.
