Bacon-wrapped meatloaf offers hearty autumn meal

Enjoy this recipe for hot meatloaf tonight and make meatloaf sandwiches tomorrow. A variety of spice and a bit of bacon lends this classic dish some extra dimension. Martha's Meat Loaf

Ingredients:
2 slices bread, torn in pieces
1/2 cup milk
1 egg
1 egg yolk
2 Tbsp parsley, chopped
2 tsp fresh thyme, chopped
1 Tbsp Kosher salt
Pinch of fresh ground pepper
Pinch of fresh ground nutmeg
Pinch of cayenne pepper
3/4 cup Parmesan cheese, grated
1/4 cup dry bread crumbs
2 Tbsp unsalted butter
1 medium onion, chopped
4 cloves garlic, minced
1 1/2 lbs ground chuck

1/2 lb ground pork sausage
8 slices bacon
1 1/4 cups dry red wine
1/4 cup sugar
1 tomato, chopped
1 tsp molasses
Pinch of ground allspice

Recipe:

Combine bread with milk in large bowl and mash to paste. Add whole egg and egg yolk. Add parsley, thyme, salt, pepper, nutmeg, cayenne, cheese and crumbs. Stir until mixed. Melt butter in a skillet. Add onion and cook until soft. Add garlic and cook one minute. Let cool, then transfer contents of skillet to bowl with bread and milk mixture. Add meat and knead until thoroughly combined. Coat two bread pans with cooking spray. Transfer mixture to the pans and neatly wrap bacon around the two loaves. Place pans on sheet and bake in oven at 350 degrees for 45 to 50 minutes. Combine red wine, sugar, tomato, molasses and allspice in a medium sauce pan. Bring to a boil over moderate heat, stirring to dissolve sugar. Cook gently for 10 minutes. Remove loaves from oven. Brush half the glaze over the loaves. Return loaves to oven and continue baking for 15 minutes. Remove from oven and brush once more with remaining glaze. Let rest 15 minutes before serving.
