Chilly spring evenings brightened up with Bogey’s chocolate pudding

Bogey's is open and ready for the summer season. The staff recently made a few tweaks to the dining room, and in the coming weeks, the deck will be open. This week, Bogey's recipe for chocolate bread pudding is yours to enjoy on any chilly spring evening. Bogey's is open seven days a week and currently taking reservations for Mother's Day. Chocolate Bread Pudding

Ingredients:
1 stick unsalted butter
3 cups heavy cream
2 cups whole milk
1.5 cups sugar
1 vanilla bean, split lengthwise
4 large eggs
2 large egg yolks
4 ounces bittersweet chocolate, melted in
bowl
2 ounces bittersweet chocolate pieces
2 ounces milk chocolate pieces
3/4 teaspoon vanilla extract

1 pound brioche, cut in 3/4 inch cubes, no
crust

Recipe: Preheat oven to 325 F. Butter 9 by 13 inch baking pan. Combine cream, one cup milk and sugar in large pot. Scrape seeds from vanilla bean, add seeds and bean husk to pot. Bring mixture to boil over medium heat, whisking until sugar dissolves. Combine 1 cup milk, eggs and yolks in medium bowl. Whisk until smooth. When the cream mixture boils, remove from heat and whisk one cup of cream mixture into egg mixture to temper. Pour egg mixture into large pot, whisking continuously. Whisk one cup egg/cream mixture into bowl of melted chocolate. Add melted chocolate to large pot, whisking continuously. Add vanilla extract. Add brioche to pot and stir well. Let stand for 30 minutes so brioche can absorb liquid. Pour entire mixture into buttered pan. Add bittersweet and milk chocolate pieces on top. Bake until set, 45 to 55 minutes. Let cool 15 minutes before serving. Serve with whipped cream.
