Bay

Ingredients:
2 lb. dried Great Northern beans 1 1/2 cups diced onion
1 Tbl. vegetable oil
1 Tbl. dried oregano
2 tsp. ground cumin
1 1/2 tsp. seasoned salt
1/2 tsp. cayenne pepper
4 1/2 quarts chicken broth
2 cloves, garlic, minced
2 lbs. boneless, skinless chicken breast halves, cubed
2 (4-oz.) cans chopped green chilies
Directions:
Place beans in a saucepan and cover with
water. Bring to boil; boil for 2 minutes. Remove from the heat. Soak for 1 hour, drain and rinse. In an 8-quart Dutch oven, saute onion until tender. Combine season- ing; add half to Dutch oven. Saute for 1 minute. Add beans, broth and garlic; bring to a boil. Reduce heat; simmer for 2 hours.
Coat chicken with remaining seasoning mixture; place in a 10x15x1-inch baking pan. Bake at 350 degrees for 15 minutes, or until juice run clear. Add chicken and chilies to bean mixture.
Simmer for 1 1/2 to 2 hours.
Yield 20 servings.
