Imagine classic homemade baked goods ranging from everything like cinnamon rolls and double chocolate zucchini muffins to various flavors of specialty cookies and vanilla mini cakes, but with a slight twist — all of the recipes are egg-free.
It’s an idea that Suttons Bay resident Dakota VanFleet made into a reality with the opening of her bakestand, “Everything but the Egg Bakery,” last October. VanFleet, a mom of three under 3, said baking eggfree recipes began as a necessity due to both her daughters having egg allergies, but it turned into a passion of creating treats the kids could enjoy and that she can now share with the community via her small business.
“It was kind of like one of those things where I just had to figure it out because there’s not a lot of things, bakery-wise, that they (the girls) could eat, so that’s what started it all,” VanFleet said. “It pushed me into a corner, but I ended up really loving it. My grandma, she was a huge baker, and whenever we went to visit her, she would always be baking something or for parties that we were having, just little desserts. I watched her growing up and I feel like a lot of those small techniques just kind of came out of me when I started doing it myself.”
